Dr. Hualu (Lu) Zhou is an Assistant Professor in the Department of Food Science and Technology at the University of Georgia. She earned her Ph.D. from the University of Massachusetts, Amherst, following that, she continued her research as a Postdoctoral Fellow for two years at the same institution. The primary objective of Dr. Zhou’s lab is on utilizing the food science and technology to develop more sustainable, nutritious and affordable plant-based foods and materials. Particularly, her research is optimizing cost-effective processing strategies and exploring how processing methods alter the structural properties and functions of plant-derived components and their impact on food sustainability, nutrition and quality (https://zhouhualu.com/).
