Dr. Charlene Van Buiten is an Associate Professor in the Department of Food Science and Human Nutrition at Colorado State University. Her educational training includes a B.S. in Nutritional Sciences from the University of Connecticut, a Ph.D. in Food Science from Pennsylvania State University and a postdoctoral fellowship in Plant Biology at Rutgers University. Dr. Van Buiten’s research group integrates food chemistry and nutritional biochemistry to investigate the use of food processing and nutrient interactions to improve the nutritional functionality of plant-based foods, including mitigation of allergenicity and inflammatory potential of food proteins.
